FLUFFY FLAX-WALNUT BANANA BREAD WITH CHOPPED MILK CHOCOLATE
GROUND FLAX & WALNUT BANANA BREAD
MADE WITH THE FLOURIST’S FRESH-MILLED FLOUR, FREE-RANGE FARM EGGS, AND A CHOPPED MILK CHOCOLATE BAR!
This fluffy banana bread is the easiest thing to make. It’s a great start if you’re just getting into baking. You can adjust it as you like; use a different nut, don’t grind your flax, or skip the chocolate; up to you! As with all our recipes that call for flour, we prefer the fresh-milled, unrefined kind from The Flourist (read why here) and eggs from chickens running free on organic farms. We get ours from Klippers Organic Farm (read about them here).
YOU’LL NEED:
5 organic eggs
2 extra-ripe, brown-speckled bananas, peeled
1 tbsp pure maple syrup (or raw honey)
1 tsp vanilla extract
1/3 cup melted, then cooled coconut oil
1/2 tsp unrefined sea salt
1/2 tsp baking soda
1/2 cup flour
2 tbsp ground flax seed
1/2 cup raw sprouted walnuts (or any of your choice)
1 milk chocolate bar (direct-trade, organic)
Optional: 1/2 tsp Maldon sea salt flakes
PREP NOTES:
If your bananas are frozen, remove them from freezer 30 minutes before starting
Here’s How to Make it!
You may also refer to the photos below. They don’t include every detail like the following steps do, but should help you envision what is happening in each step.
STEPS:
1. Preheat oven to 350°F.
2. Melt coconut oil in pan; set aside to cool
3. Lightly grease a 5”x9” loaf pan with butter or coconut oil. Set aside in shaded area (or the sun with melt it)
4. Chop walnuts (or gently smash into pieces in ziplock bag with a small hammer!)
5. Grind flax seeds in coffee bean grinder (should yield 2 tbsp ground)
6. Chop 1 full chocolate bar with sharp knife
7. In a large bowl, combine the wet ingredients: 5 eggs, 1 tbsp raw honey or maple syrup, 1 tsp vanilla extract, and 1/3 cup coconut oil. Mix well with whisk.
8. In a separate smaller bowl, combine dry ingredients: 1/2 cup flour, 2 tbsp ground flax, 1/2 tsp salt, 1/2 tsp baking soda, and 1/2 cup of smashed nuts. Mix well with spoon. (Optional: set aside 1 tbsp walnuts for a topping later: in steps below*)
9. Smash the 2 bananas on a cutting board (or a wide-bottom bowl/pan)
10. Add dry ingredients to the bowl with wet ingredients (except banana). Stir with spatula until well-mixed/no clumps
11. Fold in bananas until evenly distributed. Mix in chocolate pieces. (Optional: save some chocolate bits for the bread topping in steps below*)
12. Pour batter into the greased bread loaf pan.
13. Place in the oven and set a timer for 40 to 50 minutes
14. *Optional: 15 or 20 minutes in, open oven, remove pan, sprinkle remaining chocolate + walnut pieces on top of loaf. Then sprinkle 1/2 tsp Maldon sea salt flakes all over top. Then place back in oven until fully cooked/timer goes off.
15. Remove from oven, let cool slightly, then slice and eat!
